The quality of honey is the most important factor in a product which will be marketed to customer/society. Honey quality in Indonesia refers to Indonesian National Standard (SNI) 2013. The aim of this research is providing information about the quality of white honey from West Nusa Tenggara Province. The honey sample obtained from Apis dorsata honey collector in Piong Village, Sanggar District, Bima Regency and honey producer in Mataram City. Honey were analyzed in Academy of Chemical Analysis Laboratory and Biopharmacy Laboratory, Bogor. The observed physicochemical parameters includes water content, acidity level, color, active substance content, and sugar content (glucose, fructose, sucrose). Data were analyzed descriptively. The result of laboratory analysis showed that water content of both honey sample doesn’t meet the SNI 2013 (maximum 22%). Reducing sugar content, sucrose content, and acidity level of both samples meet the SNI 2013. White honey from Apis dorsata in Bima District contains saponin, while white honey from Mataram City contain flavonoid. During storage in the refrigerator temperature, both of sample were granulized/crystalized.
